Warm Tuscan pasta salad  

I like to let this Tuscan pasta salad sit for a while to allow the flavours to blend.  This salad is an easy salad with lots of sun-dried tomatoes, olives and a tangy dressing.  It’s the perfect salad for your next potluck dinner party.  

SERVES 4

INGREDIENTS

350 grams pasta
1/3 cup olive oil
1 clove garlic
dry oregano
dry basil
1 tablespoon balsamic vinegar
artichoke hearts
sun-dried tomatoes
a handful of basil leaves
a handful rocket leaves
pine nuts
1/4 black olives
sea salt and ground black pepper

METHOD

Prepare all your ingredients. 

Whisk together the oil, oregano, basil, garlic and balsamic vinegar.  Set aside,   

Bring a big pot of salted water to a boil;  add the pasta and cook until al dente; about 10-15 minutes.  When done, drain well and transfer to a large serving dish.      

Toss the oil mixture through the hot pasta and allow the pasta to cool slightly. 

Meanwhile, heat a medium non-stick frying pan over medium-high heat and cook the bacon until crispy; coarsly chop the bacon.     

Add the artichokes, bacon, sun-dried tomato, basil, rocket, pine nuts and olives to the pasta and toss to combine;  season to taste.
