Epic Thai meatballs!  Made with pork or chicken, the brilliant, fresh Thai flavour in these meatballs are amazing!  They are packed with flavours – it hits all the right spots with those sharp lemony, spicy flavours.  It’s the perfect main course with a huge helping of fried rice.  You don’t need too much sauce because there is so much flavour in these little beauties.

INGREDIENTS

pork or chicken mince

lemon grass

ginger

garlic

lime

lime leaves

chilli

coriander

sugar

fish sauce

breadcrumbs

egg

vegetable oil

food4four sweet chilli sauce

tomato

cucumber

onion

scallion

jasmine rice, cooked

soy sauce

oyster sauce

METHOD

Prepare all your ingredients.

Preheat your oven to 200C.  Place Meatball ingredients in a bowl and mix well to combine.  To make the meatballs, scoop up 1 slightly heaped tablespoon and roll into a ball (about 3cm / 1.25″ diameter). (Note 6 for my way)

Line an oven tray and place the meatballs in a single layer on the tray.  Drizzle meatballs with oil and bake for 20 minutes or until a bit browned.

For the rice; heat oil in a large wok or a large skillet over medium high heat.  Add garlic and stir fry for 20 seconds.  Add onion and stir fry for 1 minute.  Add scallions and stir fry for 1 minute.  Push the mixture to the side and pour the egg into the middle. Scramble it quickly for about 30 seconds.  Add the rice and Sauce. Stir fry for 2 minutes or so to heat the rice and coat all the rice with the Sauce.    

Serve the meatballs with your fried rice and food4four sweet chilli sauce, with tomato and cucumber on the side.
