Smoky pork tortillas with a zingy pineapple salsa
These pork tortillas are packed with flavour!
The pork is seasoned with a smoky chipotle tortilla sauce, which is echoed by the zingy and sweet pineapple salsa made from charred corn, pineapple, tomato, mint and coriander.

500 grams pork fillet, thinly sliced
sour cream, to serve
FOR THE PINEAPPLE SALSA
corn cob, husks removed
red onion, finely chopped
chilli, seeds removed, thinly sliced
tomato, seeds removed, finely chopped
coriander leaves and stems, chopped
lemon, juice of
Prepare all your ingredients.
For the salsa: carefully slice off the kernels and fry in a heated skillet for 5 minutes or until lightly charred. Let it cool down slightly then transfer to a bowl with the remaining ingredients. Season with salt and drizzle with lemon juice. Set aside.
Place the pork in a bowl, drizzle with oil, season and toss to coat. Heat a frypan over high heat and cook the pork in batches, turning for 1-2 minutes until browned all over and cooked through. Pour the food4four sauce over the pork and heat through.
Meanwhile, heat the tortillas in a skillet; spread a little sour cream over each tortilla then top with the pork mixture and salsa, fold over and tug in.
