Mediterranean orzo salad with tuna
This Mediterranean orzo salad is bursting with delicious flavours. It’s packed with chickpeas, kalamata olives, cherry tomatoes and feta cheese.
It’s colourful, refreshing and all ready in 20 minutes.

1 cup orzo dry
1 can chickpeas
2 cups cherry tomatoes, cut in half
1 cup Kalamata olives, pitted and cut in half
1 cup feta cheese, crumbled
fresh parsley, chopped
1 red onion, finely chopped
Prepare all our ingredients.
Bring a saucepan with salted water to a boil and cook the orzo until al dente. Drain and rinse under cold water.
For the dressing; mix together the olive oil, lemon juice, garlic, salt, and pepper until totally combined.
Place the orzo and all the other ingredients in a large bowl; pour the dressing over and toss to combine. Taste and adjust seasoning serve cold.
Last up to 3 days in an airtight container.
