Jo Cook’s Greek Lamburgers 

I crave Greek lamb burgers in Summer. In our house, the grill is regularly on throughout Summer and everything gets grilled. And this lamb burgers are just the right thing for a midweek dinner.

layers of flavour are just amazing – they’re juicy and flavourful, served on a toasted bun with tzatziki sauce, tomatoes, cucumbers and feta cheese.

 

 

 

SERVES 4

INGREDIENTS

FOR THE PATTIES
ground lamb
1/4 cup fresh mint chopped
1/4 cup fresh dill chopped
1/2 cup Kalamata olives, chopped
1 tbsp dried oregano
1 tsp ground cumin
1 tsp ground corriander
salt and pepper to taste

FOR THE TOPPINGS
4 burger buns
1 cup rocket
1/2 cup tzatziki sauce
2 medium tomatoes sliced
1/2 slices English cucumber
1 small red onion sliced
1/4 cup feta cheese crumbled

METHOD

Prepare all our ingredients.

In a medium bowl combine all the lamb burger patties ingredients together and mix everything together until everything is well incorporated. Divide the meat in 4 and form into burger patties.

Heat a BBQ or skillet over high heat.

Place the patties on the BBQ or skillet and cook for about 5 minutes per side. DO NOT press on the patties while cooking.
Add the hamburger buns to the grill or skillet and grill them for about 30 seconds.

Remove everything from the grill and assemble the burgers. Start with adding some arugula to the bottom of the bun, then the burger patty, followed by a good dollop of tzatziki, some crumbled feta cheese, tomato slices, cucumber slices and red onion.
Serve immediately.
