“This is part of my 15 minute recipes. One of my favourite recipes and probably the first recipe ever made for a pasta is the good old fashioned plain tomato recipe. This pasta sauce works for all pasta’s especially the plain home-made tagliatelle.
Ingredients for basic tomato sauce
- 1 tablespoon olive oil
- 1 teaspoon butter
- Clove of garlic lightly crushed
- Salt and pepper
- Bunch of basil leaves (4 to 6 leaves)
- 1 tin tomatoes – of course Marsana tomatoes are best, but get a good imported Italian tomato tin
- 1 teaspoon sugar if necessary
- Parmesan Cheese
Instructions for basic tomato sauce
Heat butter and oil, add garlic and salt. Add basil and then tomatoes, cook for 15 minutes on low heat. Season and add sugar if sauce is a little bitter. Toss into hot pasta and serve with Parmesan cheese.
