We’ve made it at Social Kitchen for Mother’s day last year and it was an instant hit. If you want to make it a bit more saucy, just double the sauce ingredients.

INGREDIENTS

boneless skinless chicken breasts, thinly sliced
2 tablespoons olive oil
1 cup cream
½ cup chicken broth
1 teaspoon garlic powder
1 teaspoon Italian seasoning
½ cup parmesan cheese
1 cup spinach, chopped
½ cup sun dried tomatoes
1 ½ rice

METHOD

Prepare all your ingredients.

Bring 3 cups of water to the boil. Add the rice and 1 teaspoon salt. Bring the water back to the boil, stir, cover and reduce heat to low. Simmer for 15 minutes. Remove from the heat and let it stand for another 10 minutes. Fluff with a fork.

Add the olive oil to a large skillet and cook the chicken on medium high heat for 3-5 minutes on each side or until brown and no longer ping in the canter. Remove the chicken and set aside.

Add the cream, chicken broth, garlic powder, Italian seasoning, and parmesan cheese. Whisk over medium high heat until it starts to thicken. Add the spinach and sundried tomatoes and let it simmer until the spinach starts to wilt. Add the chicken back to the pan and serve over rice.
