Carbonara pasta

Well-made carbonara pasta is the ultimate crowd pleaser!

It’s easy to make and  can be thrown together within minutes for a simple and delicious midweek dinner on the couch, yet it works just as well as a classy dish to pull out when you really want to impress someone special.

INGREDIENTS

400 grams spaghetti
250 grams rind less Eskort bacon, chopped
1 large clove garlic, finely chopped
4 egg yolks
½ cup cream
¾ cup parmesan cheese, finely grated
1 tablespoon parsley, chopped

METHOD

Prepare all your ingredients.
Bring a large saucepan of salted water to the boil. Cook the spaghetti for 10-15 minutes or until al dente, stirring often to prevent sticking. Drain, reserving 1 cup of the cooking water.
Meanwhile, cook the bacon in a large non-stick frying pan over medium-high heat until browned and slightly crisp. Turn the heat to medium and add the garlic; cook for a further minute or until fragrant.
Combine the egg yolks, cream and most of the parmesan in a medium-sized bowl. Season with salt and pepper.
Add the cooked spaghetti to the bacon and garlic with a tablespoon or two of the cooking water. Remove from the heat. Mix the egg mixture through the pasta until well coated and creamy. Add more pasta water if needed. The sauce should be creamy and not too dry. Stir in the parsley and serve immediately with a little parmesan on top.
