I have been cooking up a storm with my partner Cori; we are testing new recipes weekly for our food delivery service, ‘Food4Four’.

We are in the heart of October and it’s a beautiful time for South African produce. The weather in Pretoria has been crazy and Hot Food is still the order of the day even though, summer salads are definitely on the rise.
Our recipe of the week
Grilled Fillet with Onion Marmalade and Black Pepper and Aioli
Salt and black pepper for rubbing into the fillet
300g onion marmalade, homemade or bought
Ciabatta Bread (we recommend to buy your bread from Lucky Bread Company)
Preheat your oven to 230 degrees C
Rub your fillet all over with Salt, Black Pepper, and Olive Oil. Heat the oil in a large roasting pan over medium heat and brown your fillet on both sides turning it from time to time until golden brown.
Take off the stove and cook the meat further in your preheated oven for about 20 to 30 minutes depending on the size of meat and how well you want your meat cooked. Use a meat thermometer to test.
Once cooked, take meat out of roasting pan and let it rest on a cutting board for a further 10 to 15 minutes.
It is now ready to be cut and served on a platter that has been spread with Aioli sauce and then topped with onion marmalade then the sliced meat on top of the onion marmalade.
A more rewarding meat dish you will seldom taste and when assembled with steamed asparagus, rocket leaves, roasted cherry vine tomatoes and fried capers…..a definite dinner party sensation.

We are all very excited with our new Hot Spot in Pretoria, Menlyn Maine, it’s seldom that Pretoria outdoes Johannesburg but this time….. Congratulations must definitely go to Pretoria, well done to everyone that has been involved, this space is awesome.
A special mention to an authentic Italian Restaurant, Deli, Supermarket Bakery, Winery called, Old Town Italy, we were blown away by the décor, the freshness and abundance of products and the Italianism that complements the whole set up.
